Pizza Casserole

1 pound ground beef
1 - 15 ounce jar spaghetti sauce (I used Ragu)
1 egg
1 cup milk
1 cup bisquick
8 ounces mozzarella cheese (or whatever you have on hand)
1/3 cup parmesan cheese (ditto)
1/2 cup chopped pepperoni (mainly I chopped it because I have toddlers)

Brown ground beef and drain. Pour meat into casserole dish. Add pizza sauce and pepperoni, layer a bit of cheese on top. In a seperate bolw add egg, milk, oil and Bisquick. Mix well. Pour mixture over ground beef. Bake at 350 degrees for 25 to 30 minutes. Bisquick mix should be brown. Add cheeses on top and bake another 5 minutes or until cheese is melted.

Leftover Chicken Ranch Crescent Pizza

1 roll Pillsbury Crescent Rolls or a Sheet
2 cups cooked chicken, chopped (I use leftovers from a Rotisserie Chicken)
enough ranch dressing to coat the chicken to your liking
2 cups mozzerella cheese, shredded
1/4 teaspoon garlic powder
italian herbs
dried parsley

1. Spray a small cookie sheet with nonstick spray. Spread the dough evenly across the pan and up the sides. Bake in a 375 degree oven for about 10-12 minutes or until dough is just barely cooked through.
2. In a small bowl, mix the chicken with the ranch dressing and the garlic powder until evenly coated. Evenly distribute the chicken over the crust.
3. Sprinkle cheese over the chicken. Top with a sprinkle of Italian herbs and dried parsley.
4. Place back in the oven for an additional 5-7 minutes, or until the cheese is bubbly.

Parmesan Chicken

Parmesan Chicken
1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted (I used 1.5 sticks of margarine)
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester) (I used 2/3 cup of the finely grated parmesan in the green can)
2 Tbsp chopped fresh parsley (I used dried)
1/4 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches

1 Preheat oven to 450°F.

2 In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.

3 Place coated chicken pieces on to a 9x13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. Note that the chicken will get much more browned on the bottom side than on the top.

Serves 4-6.

Took me all of 10 minutes to prepare, 15 to cook... It was so easy and good it was sinful, now go make, enjoy and thank me later ;)

Shortcut Chicken Manicotti

1 can (10-3/4 oz.) condensed cream of chicken soup
1-1/2 cups water
1/4 lb.(4 oz.) VELVEETA cut into 1/2-inch cubes
*2 cups frozen broccoli florets
12 manicotti shells, uncooked
1 lb. boneless skinless chicken breasts, cut into thin strips
1/4 cup KRAFT Grated Parmesan Cheese

HEAT oven to 400ºF. Microwave soup, water and VELVEETA in microwaveable bowl on HIGH 3 min. or until VELVEETA is melted and mixture is well blended, stirring after 2 min.; pour 1/3 into 13x9-inch baking dish. Set aside. Add broccoli to remaining soup mixture.

STUFF manicotti with chicken; place in baking dish. Top with remaining soup mixture and Parmesan; cover with foil.

BAKE 45 to 50 min. or until manicotti is tender and chicken is done.

*I don't use the broccoli since I'm married to someone who is anti-vegetable.

Easy Manicotti

Ground beef or Turkey 1lb
2 cans of Hunts Tomato Basil Spagetti Sauce (cans are large)
1 chopped onion
2 cups Parmesan and Mozzarella cheese blend divided
16 oz cottage cheese (I use fat free)
Box of Manicotti noodles
1 cup water

Brown meat and onion together, drain. Mix 1 cup cheese blend with the cottage cheese. Add meat to mixture. In a baking dishes (I use the long ones) coat w/ pam cooking spray. then pour a layer of spaghetti sauce. Stuff the manicotti with the cheese/meat mixture and place in baking pan... they should be side by side and touching if necessary. When pan is full (only do 1 layer) then pour more spaghetti sauce over the manicotti noodles. Pour 1 cup water over manicotti noodles and sauce then sprinkle 1 cup cheese on top and cover w/ tinfoil.

Bake at 375 for one hour or until manicotti shells are tender.

Teriyaki Chicken

Boneless Chicken Breasts or Tenders
Kikkoman Teriyaki Sauce
1 small can crushed/sliced Pineapple (doesn't matter)

Put the chicken into a ziploc bag, add pineapple, then add enough teriyaki sauce to keep chicken fully immersed. Let sit overnight in fridge (sometimes I'll even throw in the frozen chicken instead of thawing it out) and then bake w/ sauce in casserole dish at 375 for about 30 mins. Chicken is done when it runs clear. Serve over rice.

Easy Slow Cooker Chili

1 pound ground turkey
2 (10.75 ounce) cans low sodium tomato soup
2 (15 ounce) cans kidney beans, drained
1 (15 ounce) can black beans, drained
1/2 medium onion, chopped
2 tablespoons chili powder
1 teaspoon red pepper flakes
1/2 tablespoon garlic powder
1/2 tablespoon ground cumin
1 pinch ground black pepper
1 pinch ground allspice

Place turkey in the skillet, and cook until evenly brown; drain.
Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
Cover, and cook 8 hours on Low or 4 hours on High.

Triple Chocolate Macaroons

2 egg whites, room temperature
1/8 tsp. salt
1 14 oz. can sweetened condensed milk
2 tsp. vanilla
2 pkgs. sweetened coconut
1 cup semi-sweet chocolate chips
1 cup white chocolate chips
1 16 oz pkg. melting chocolate

Preheat oven to 350°

Line baking sheets with parchment paper

Whisk together egg whites and salt until foamy, about 2 minutes.

Whip in condensed milk and vanilla

Fold in the coconut, chocolate and white chocolate chips

Drop by heaping tablespoonful onto lined baking sheets

Bake for 20 minutes

Cool on baking sheet for 2 minutes (do not let cool any longer than a couple of minutes, or it will be IMPOSSIBLE to remove them from the parchment paper)

Remove to wire racks and cool completely

Once they have cooled completely, melt the block chocolate and dip the bottom of the macaroon into the chocolate.

Place on parchment paper until the chocolate hardens.



Makes about 3 dozen macaroons.

Broccoli Craisin Salad

Broccoli Craisin Salad

3-4 heads of broccoli, chopped
1 bag craisins
1 small-medium red onion, chopped
1 cup sunflower seeds
1 jar or small bag bacon bits
1 cup mayo
2 tbsp vinegar
4 tbsp sugar

Combine first 5 ingredients in large bowl. Mix well.

Combine last 3 ingredients in small bowl. Mix well.

Combine mayo mixture with broccoli mixture. Mix well.

TIP: This tastes WAY better if it has time (overnight would be best) to sit in the fridge before serving.

Curried Pea Salad

Curried Pea Salad

2 lbs. frozen petite peas, thawed and drained
1 1/2 cups mayonnaise (This was almost too much, next time I'll try 1 cup)
2 heaping tsp. curry powder
2 cans (6 oz each) smokehouse almonds, chopped (this is a MUST)
1 cup sliced water chestnuts, chopped
1 bunch green onions, chopped

Mix and chill



This recipe was passed around our office by a law clerk, he brought it to last year's Christmas party and it was a HIT.

Bacon Cheeseburger Rollup

Cheeseburger Bacon Rollup

1 lb. lean ground beef
4 slices Bacon, chopped
1 small onion, chopped
1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust

HEAT oven to 400°F. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add VELVEETA; cook until melted, stirring frequently. Cool 10 min.
UNROLL pizza dough onto baking sheet sprayed with cooking spray. Press into 15x8-inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.
BAKE 20 to 25 min. or until golden brown.

Classic Apple Pie

5-7 apples
1 cup sugar
2 Tbsp flour
pinch of salt
1 tsp cinnamon
1/4 tsp nutmeg
2 tbsp cold butter, cut up into small chunks

Peel core, and slice apples into large bowl. Add dry ingredients, mix well with wooden spoon, then add butter chunks (I find it easier to not even take the butter out of the fridge until I'm ready to add it.) mix well with wooden spoon. Place in pie shell, cover with another pie shell. Cut slits in top. Bake at 400 degrees for 40-50 minutes. Makes 1 pie, I also cover the edges of the pie crust with tin foil so it doesn't burn and I also place the pie on a cookie sheed covered with tin foil as the apple glaze will drip.

Peanut Blossoms

SIFT TOGETHER
1 3/4 cups flour
1 tsp soda
1/2 tsp salt

CREAM TOGETHER
1/2 cup crisco
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar (packed)
1 egg
1 tsp vanilla

*bag of hershey's kisses

Blend in dry ingredients, mixing thoroughly. Shape dough into balls, using rounded teaspoon for each. Roll balls in sugar and place on greased sheets. Bake 10 minutes on 375, remove and top with a hershey's kiss. Return to oven and bake 5 more minutes.

Pumpkin Pie

4 eggs
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
2 cups milk
1 cup sugar
3 Tbsp flour
16 oz can pumpkin

Beat eggs, add sugar and pumpkin. Beat and add flour, salt, cinnamon, nutmeg and ginger. Beat, add milk. Beat. Makes 2 pies, bake at 375 for 1 hour.

Shepherd's Pie

1 lb Ground beef browned w/ onion, drained
2 cans of Minestrone soup
2 cans of Bean w/ Bacon soup
mashed potatoes

Mix meat with soups.

line dish with meat mixture and top with mashed potatoes.

cook at 350 for 20 minutes.

Neiman Marcus Cookies

2 Cups butter
4 cups flour
2 tsp soda
2 cups sugar
5 cups blended oatmeal
24 oz chocolate chips
2 cups brown sugar
1 tsp
1 8oz hershey bar-grated
4 eggs
2 tsp bkng powder
3 cups chopped nuts (optional)
2 tsp vanilla

Measure oatmeal and blend to a fine powder. Cream butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, bkng pwdr and soda. Add chocolate chips, hershey bar and nuts. Roll into balls and place on cookie sheet. Cook at 375 degrees for 10 minutes.

My Favorite Fudge

3 cups sugar
3/4 cups margerine
2/3 cups (5 1/3 fl oz can) evaporated milk
1 12 oz pckg semi sweet choc chips
1 7 oz jar marshmallow cream
1 tsp vanilla

Combine sugar, margerine, and milk in heavy sauce pan, bringing to full rolling boil, stirring constantly to prevent scorching. Remove from heat; stir in chocolate chips until melted. Add marshmallow cream, vanilla and beat until blended. Pour into greased 13x9" pan.

Swedish Oatmeal Cookies

**not to discourage, but this recipe is kind of hard, and the cookies tend to come out really super flat... I've yet to get it like my grandma did.**

1 1/2 cups flour
1 cup brown sugar (packed)
1 tsp soda
1 tsp vanilla
3 cups oats
1 cup sugar
1 tsp salt
1 cup shortening
2 eggs

Heat oven to 350, in larg bowl, combine all above in this order: shortening, both sugars, (cream well), then eggs, then rest. (stir in oats w/ spoon.)

Topping
2/3 cups sugar
3 tbs light corn syrup
1/4 tsp almond extract
1/2 cup margerine
2/3 cups almonds (chopped)

In small pan, combine sugar, margerine and corn syrup. Boil; remove, stir in almonds and extract. Let cool slightly. Drop dough in rounded tsp's on ungreased cookie sheet. Bake 8 min, then w/ tsp make indent on top of cookies (gently!) spoon 1/4 to 1/2 tsp of topping onto cookie. Bake 6-8 minutes longer. Cool slightly before removing them from cookie sheet.

Great Grandma's Applesauce Cake

1 cup sugar
1/2 cup melted shortening
2 cups flour
2 tsp (level) soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
3 tsp cocoa
1 tsp cornstarch
1 1/2 c applesauce
1 cup nuts (chopped)
1 cup raisins (soaked)

After you melt the shortening, let it cool in mixing bowl at least 5 min. Stir/beat well liquid ingredients. Add sugar and stir, then sift together flour and spices, add applesauce at same time; and beat until smooth. Stir in nuts and raisins. Bake in a greased tube pan (or bundt pan will do.) 350 for 60 min. Let cool before removing from pan.

White Cookies

2 egg whites - beaten stiff
3/4 cups sugar
pinch of cream of tartar
1/2 tsp mint flavoring
1/2 pckg of choc chips

Beat egg whites till stiff, add sugar 2Tbsp at a time. Beat well each time, add cream of tartar, beat well. Stir in flavoring and choc chips. Drop by teaspoonfuls onto brown paper bag on cookie sheet. Bake 300 for 25-30 min.

Chalupe

6-8 chicken breasts
2 cans golden mushroom soup
2 cans cheddar cheese soup
2 cups sour cream
1 clove of garlic
1 pckg corn tortillas (use all)
1 diced onion
1/2 cup chiles diced or one small can of diced green chiles

Boil chicken, then skin and debone. Mix sauce up (soups, sour cream, garlic, onion, chiles) Grease w/ butter a large casserold baking dish. Then layer everything. Start with sauce, then shredded chicken, then tortillas (also shredded) sauce and so on. End with sauce on top. Bake at 350 for one hour.

Snickers Apple Salad

Whipped cream/cool whip
3-4 kinds of apples, chopped (w/ skin)
2-3 snickers bars cut up

Cold Rice and Artichoke Salad

box of chicken rice a roni
a jar or two of artichoke hearts (in a juice, not water)
red pepper
mayonnaise

Make the chicken rice a roni as directed. Mix about a cup of mayo (you could use less or more, but I use about a cup.)with the juice from the artichoke hearts. It makes a sort of weird looking dressing. Then chop the red pepper (and really, I've added celery and onions to it too, so you can add what you like.) Chop the hearts as well, mix everything together and put in a casserole dish. Chill and serve. I like it both ways, hot and cold; just depends on my mood. Sooooo yummy.

Zucchini Bread

3 eggs - beaten
1 cup melted butter
2 cups sugar
2 cups zucchini(peel, chop and put through a blender till you have puree)
3 tsp vanilla
3 cups flour
1/2 tsp salt
1 tsp soda
1/2 tsp baking powder
3 tsps cinnamon
1/2 tsp ground cloves
1/2 tsp nutmeg

mix it all up good. Put in those leetle itty bitty loaf tins and bake at 325 for 1 hour. Makes a bazillion mini loaves, serve cold with butter and prepare to die of yumminess.

Cheeseburger Rice

1 lb lean ground beef (I use turkey)
2/3 cup ketchup
2 cups uncooked instant rice(minute rice will do)
1 3/4 cups water
1 Tbsp mustard
1 cup grated cheese

Brown beef and drain. add water, ketchup and mustard and bring to a boil. (mix it up so it all spreads evenly.) Add rice, stir in so it's saturated. Cover with the cheese, put a lid on the pan and reduce heat to low for 5 minutes before serving.

Caramel Nut Crunch

1/2 cup packed brown sugar
1/2 cup dark corn syrup
1/4 cup margerine or butter
1/2 tsp salt
6 cups cheerios cereal
1 cup pecan halves, walnut halves or peanuts (or all three!)
1/2 cup slivered almonds

Heat oven to 325. Butter jelly roll pan (I also use raised cookie sheets) Heat brown sugar, cory syrup and margerine and salt in a saucepan over medium heat, stirring constantly. (Until sugar is dissolved.) Remove from heat, stir in cereal and nuts until well covered. Spread out in pan, bake 15 minutes and cool slightly for about 10 minutes. Loosen with spatula, let stand about an hour before storing in a covered container.
